1 Spaghetti Squash (cut in half length-wise)
1 cup Green Pepper (chopped)
1 cup Onion (chopped)
3 cups Mushrooms (sliced
2 cups Tomatoes (chopped)
2 tbsp Italian Mrs. Dash
1 tbsp crushed garlic
1 tbsp Onion Powder
1/4 cup Balsamic Vinegar
1 tbsp Splenda
Scoop out inside seeds and pulp from squash and lay face down on plate. Partially cover and microwave it for 8 minutes...turning once part way through.
While squash is cooking combine onion, green pepper and mushrooms in fry pan sprayed with non-stick cooking spray. Saute' and once these ingredients are tender, add the next ingredients on the list. Add spices and vinegar to taste.
Scoop out the cooked squash (should look like spaghetti noodles), you can add some chopped up cooked chicken, then spoon sauce over top!
How exactly are you cooking this in the microwave Angela? I am a bit lost on that part but it sounds interesting and good. Do you happen to have the nutritional breakdown of it as well?
i think what she means is that when you cut in into halves, scoop out the seeds and the way we do it is take a dinner plate (so the whole 1/2 will fit) and lay one 1/2 of the squash face down (leave the skin on, it will be facing up) so almost the entire surface of the squash is making contact with the dinner plate and we put a few tbs. of water on the plate the cover it with saran wrap & nuke it. only takes a couple of minutes and comes out perfect; scoops right out. sounds great Angela!!!

Hi 2Sick, Zrari is right, you can also use a cookie sheet and bake it in the oven...what ever works best for you. As for the nutritional breakdown, it all depends on the amounts used but I will give you the breakdown according to the amouts that I use. 1/2 cup Spaghetti squash = 20 calories, 5g carbs, 2g fiber 1/2 cup Green pepper = 13 calories, 3g carbs, 1g fiber 1/2 cup Onion = 30 calories, 7g carbs 1/2 cup Mushrooms = 20 calories, 4g carbs 1/2 cup Tomatoes = 20 calories, 4g carbs, 1g fiber And I like to add chicken... 2oz chicken = 392 calories, 17g protein Hope you like this recipe!
