Good scrambled egg recipe?

The only meal I can't cut carbs out of is breakfast, and I'd like to find a recipe for use with egg beaters (egg whites) and with some flavor...the only way I've been able to eat them is with salsa.

I'm so sick of eggs and egg whites...okay that doesn't help...try hot sauce like frank's louisiana hot sauce or buffalo sauce...cheese that frito lay "con queso" stuff (not sure it's even cheese or whatit is other than yummy) adds few carbs if that's your aim...otherwise add items like diced onion, green pepper, red pepper, jalepneos, ham, ground beef, pieces of steak, etc...all of the above works out pretty nicely...my current favorite two egg recipes 1) 6 whole eggs + 6 whites 2 tablespoons of con queso chees stuff diced green pepper diced red pepper small amount of diced onion a few la preferida japs diced up small ground beef (helps if pre-cooked) 4-5 shots of frank's LA hot sauce scramble the eggs and throw the other "add ons" in while scrambling/cooking...save the hot sauce for the end. 2) scramble your eggs and some smart balance spread and then add splenda and splenda brown sugar to them to taste...sounds awful, but is good.

Hey bigbadjav - have you seen my recipe for Protein pancakes? Another thing you can make are pumpkin pancakes...so, let me get this straight, are you not able to have carbs for breakfast, or do you want to reduce your carb intake at breakfast time?

For what it's worth, my favorite meal has become breakfast. It's pretty simple, but I enjoy the hell out of it. Scrambled Eggwhites with a chopped clove of garlic; French Fry Cut potatos; microwaved 2 slices of fat free cheddar cheese melted on top salted to hell emril's essence 1 serving of fancy catchup I'll usually do all the prep work the night before, so all I have to do is throw the potatos in the microwave, turn on the skillet; and eat. Wicked easy @ 6am when I'm still not 100% functional. Also, egg whites + protein shake + a little oatmeal is pretty damn good hope it helps -me Oh ya, how do you make pumpkin pancakes? sounds good; thanks

Trying to reduce carbs. But I had some acid reflux problems and the doc told me to go easy on spicy stuff so it won't come back and the only things that I've used to give eggs some flavor are salsas and hot sauce. So anything I can add that's mild is ok. I saw your thread about protein pancakes, need to check it out.

Pumpkin Pancakes/Cookies 14 oz can of pumpkin (not pie filling) ½ cup egg whites (4 large egg whites) 1 tsp cinnamon ¼ tsp nutmeg ¼ tsp ginger ½ tsp vanilla extract 3 tbsp brown sugar twin 1½ tbsp low fat cocoa 1 cup dry oatmeal (5 oz) - Heat an oven to 350 F. - Mix all the ingredients in a large bowl. - Spray the cookie sheet with fat free pam. - Drop the mixture by tablespoonful about 2 inches apart then press down slightly. - Bake for 22-25 mins at 350F. - Remove from the oven and allow to cool for 20 mins. The good thing about these are you can take them with you and snack on them throughout the day. You need to try the chocolate cake...it's great and you can eat it GUILT free! I've got lots of ideas...after a few contest preps, getting creative becomes a necessity 😉

This may sound strange, but it's tastes so good... I'll use 1-2 whole eggs, add 4 egg whites, and scramble them all together. Then, I'll take 2 rice cakes, spread sugar free/salt free peanut butter and sugar free jam on them, and top them up with the scrambled eggs...MMMMM!

i really like A1 steak sauce on eggs, heres an egg bake recipe that breaks it up a bit. dozen eggs scrambled add any of the following tomato, garlic, ham, cheese, mushrooms, green pepper, onion, beef, salt and pepper, oregano mix it all up and bake @ 400 in a sprayed pyrex pan, may have to stir once while baking.

you could try what i had for breakfast, i did it like this as i was going gym after and didnt want any carb intake as i was going for cardio / fat burn, ok pretty simple but i wonder how many ppl think of just these two items, as many eggs as you like scrambled or omellete, and also pan fry / oven cook etc a gammon steak or ham steak ( depends what country ya from i guess ) so yeah 1 gammon and scrambled eggs, with ketchup, awesome, if you wanna add carbs well toast up some wholemeal bread and dump the lot on the bread, M cells

another one hwo many you eggs you want your preference but this works for me about 6 eggs 1 small onion loosle6y chopped nice n chunky handfull of grated cheese or slice a couple of slices of good old chedder, here is how i like to do it, 1, pan fry the onion to your liking, throw in the eggs do not mix just before the omelette is cooked through sprinkle on the cheese and fold then serve, M cells

Pumpkin helped me stay "sane" during my fiberous stage of contest prep - I even tried blending it with some vanilla protein and it wasn't too bad - a little thick, but it was good. If you look at my recipe for chocolate cake, you could replace the apple sauce with pumpkin, add the typical spices (nutmeg, ginger, cinammon, and vanilla) and take out the cocoa then you'd have a pumpkin cake. If it's "off season" you could also add about 4 oz of lite cream cheese in there as well... I'll let you know if I have any other pumpkin recipes/ideas Madbrad. As for spicy foods - I LOVE them!
